Green Bean Fritatta with Tomato and Onion


 

Green Bean Fritatta with Tomato and Onion

  • 1 Tbsp. sunflower oil or California Olive Ranch extra virgin olive oil
  • 2 large tomatoes, chopped and diced
  • 1 medium onion, sliced and diced
  • 1 lbs. green beans, cooked, boiled or steamed
  • 3 eggs
  • Salt to taste
  • California Olive Ranch extra virgin olive oil for drizzling
In a hot skillet, heat sunflower oil or California Olive Ranch extra virgin olive oil and sauté tomatoes and onions for five minutes. Lower heat to medium and beat eggs with salt, then combine into the skillet with beans. Cook for five to seven minutes.
For garnish, drizzle with California Olive Ranch extra virgin olive oil. A delicious side dish for anyone.
